Capers can be your secret weapon to enhance your cooking
May be you never thought at all about capers but these pickled flower buds can be used in all sort of dishes.
Capers go well with smoked salmon, smoked trout, smoked eel and all sort of smoked fish.
Try adding a teasponn of capers per person to a salad of mixed leaves, boiled egg, avocado, red onion, lemon juice and olive oil. It will have more zing.
When frying fish in brown butter, lift the fish from the pan once it is cooked, and add cappers, lemon juice and chopped parsley, then swirl aroun to make a quick sauce and pour it over the fish.
Blend capers and parsley into mayonnaise to maked it green. Capers, pitted olives and a kitchen robot is all you need to make tapenade.
